Western Culinary InstituteLocated in one of America's most beautiful and livable cities - Portland, OR - Western Culinary Institute (WCI) promises world renowned Le Cordon Bleu education in the midst of a thriving restaurant scene. WCI offers both a Le Cordon Bleu Culinary Arts program and a Le Cordon Bleu Hospitality & Restaurant Management program.

The Western Culinary Institute facilities include about 40,000 square feet of space offering 7 lecture classrooms with audio-visual equipment, 10 kitchen classrooms, student lounges, a resource center, and computer lab. WCI also operates three student-run restaurants: Chef's Corner, Chef's Diner, and a classical, formal dining room, all of which are open to the public.

Western Culinary Institute's newest addition is an 11,000 square foot facility in the Goose Hollow Building located three blocks from the main campus. This facility, which houses the Le Cordon Bleu Restaurant Management program, includes three kitchen labs, two computer labs, a wine studies lab, a lecture classroom, student lounge area, and an International Bistro.

Le Cordon Bleu Culinary Arts Program

The Culinary Arts program centers around hands-on teaching of cooking and baking skills, as well as the theoretical knowledge behind those skills. Students will learn to practice advanced technical skills in food preparation, all the while becoming familiar with purchasing and inventory controls, buffet work and plate presentation, front-of-the-house operations, and basic principles of kitchen management. Other topics covered include the principles of food identification, nutrition, dietetics, and food/beverage composition.

Le Cordon Bleu Restaurant Management Diploma Program

The Le Cordon Bleu Restaurant Management Diploma curriculum includes hands-on teaching of practical restaurant management skills, as well as the theoretical knowledge behind the field. Student will learn technical skills in food service and basic principles of restaurant management. They will become familiar with front-of-the-house operations, and develop an understanding of the principles of food identification and food/beverage composition. In the end, students will have acquired the professionalism necessary for working successfully in the hospitality industry.
