In the baking and pastry programs students will learn fundamental pastry and bread-baking techniques, all-purpose baking, cake decorations, desserts, and pastry arts. Le Cordon Bleu Schools of North America offer schooling for the state of Texas in Dallas and Austin. These schools offer a certificate in culinary arts, an Associate degree in culinary arts, a certificate in patisserie and baking, and an Associate degree in patisserie and baking.
In the certificate program in culinary arts and the certificate program in patisserie and baking, students will have time in the kitchen and some lessons from professional chef instructors. While it is more limited than other programs, students now have more time in the kitchen and with professionals than was previously available in the certificate program.
With the Associate degree program in culinary arts and the Associate degree program in patisserie and baking, students will have plenty of kitchen time and will learn from professional chef instructors. Students will learn restaurant management, hospitality management, and general education.
The Auguste Escoffier Schools of Culinary Arts offer classes in Austin, Texas.
Students can choose between two culinary programs. The diploma in pastry arts program runs for fifteen weeks on evenings and weekends. This program is ideal for people who work and need a flexible schedule. Students will learn patisserie and confections, plating, restaurant style desserts, and advanced pastry topics.
The program for a diploma in culinary arts is a six month course. Students will learn sourcing and serving local and seasonal food.
Stratford Career Institute has a unique program for cooking and catering. It offers courses in the food service industry, menu creation, portion control, recipes, refrigeration and safe handling, cooking methods, desserts and baked goods, presentation, and business aspects. This school is great for working students. It allows them to learn at their own pace and their own schedule.
